This recipe features a succulent whole chicken that's spatchcocked for even grilling. The tangy and sweet orange glaze adds a burst of flavor to the juicy chicken, creating a delightful combination of citrus and savory notes.
Ingredients: 1 whole chicken, spatchcocked. 2 oranges, zest and juice. 2 tablespoons honey. 2 tablespoons soy sauce. 2 cloves garlic, minced. 1 teaspoon ginger, grated. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Warm the grill up to a medium-high level. Mix orange zest, orange juice, honey, soy sauce, minced garlic, grated ginger, salt, and pepper in a small bowl. Whisk the ingredients together to make the glaze. Lay the chicken on the grill with the skin side down. Cook for 5 to 7 minutes, or until grill marks show up. Turn the chicken over and cover the skin side with a lot of the glaze. Keep grilling for another five to seven minutes. Brushing and flipping the chicken again and again for about 25 to 30 minutes, or until it is fully cooked and the internal temperature reaches 165F 75C. After it's done, take it off the grill and let it sit for a while. Before serving, sprinkle with chopped fresh parsley.
