Cooking a traditional meatloaf on your Traeger grill will give it a bold new look. This 'Not Your Mama's Meatloaf' will be a hit at any barbecue because it tastes smoky and is glazed with barbecue sauce.
Ingredients: 2 lbs ground beef. 1 cup breadcrumbs. 1/2 cup milk. 1/2 cup ketchup. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 2 eggs, beaten. 1 tsp Worcestershire sauce. 1 tsp Dijon mustard. 1 tsp dried oregano. 1 tsp dried thyme. 1/2 tsp salt. 1/2 tsp black pepper. 1/4 tsp cayenne pepper. 1/4 cup chopped fresh parsley. 1/4 cup barbecue sauce plus extra for glazing.
Instructions: Preheat your Traeger grill to 375F 190C. In a large mixing bowl, combine ground beef, breadcrumbs, milk, ketchup, onion, garlic, eggs, Worcestershire sauce, Dijon mustard, oregano, thyme, salt, black pepper, cayenne pepper, and chopped parsley. Mix until well combined. Shape the mixture into a loaf and place it on a Traeger-safe pan or directly on the grill grates. Brush the meatloaf with barbecue sauce, ensuring an even coating. Place the pan on the preheated Traeger and cook for approximately 60-75 minutes or until the internal temperature reaches 160F 71C. During the last 15 minutes of cooking, brush additional barbecue sauce on the meatloaf for a flavorful glaze. Once cooked, remove the meatloaf from the grill and let it rest for 10 minutes before slicing. Serve slices with your favorite sides and enjoy!
