The classic deli favorite Reuben is made even better with these grilled versions. They're great for lunch or dinner because they're full of corned beef, tangy sauerkraut, and melted Swiss cheese.
Ingredients: 8 slices rye bread. 1/2 lb thinly sliced corned beef. 1 cup sauerkraut, drained. 8 slices Swiss cheese. 1/4 cup Thousand Island dressing. Butter, for grilling.
Instructions: Preheat the grill to medium heat. Spread Thousand Island dressing on one side of each slice of bread. Layer corned beef, sauerkraut, and Swiss cheese on half of the bread slices. Top each sandwich with the remaining bread slices, dressing side down. Butter the outsides of the sandwiches. Place sandwiches on the grill and cook for 3-4 minutes per side, or until bread is golden brown and cheese is melted. Remove from grill, slice, and serve hot.
