A tasty and healthy salad with grilled tempeh, sweet peaches, and crunchy pistachios mixed together in a balsamic vinaigrette. It's great for a summer barbecue or a quick and easy meal.
Ingredients: 1 block of tempeh, sliced. 2 peaches, sliced. 1 cup pistachios, shelled. 4 cups mixed greens. 1/4 cup balsamic vinegar. 2 tablespoons olive oil. 1 tablespoon maple syrup. Salt and pepper to taste.
Instructions: Warm up the grill over medium-high heat. For 15 minutes, mix the tempeh slices with the maple syrup, balsamic vinegar, olive oil, salt, and pepper. Spiced tempeh slices should be grilled for three to four minutes on each side, or until grill marks show up. Put mixed greens, grilled tempeh, sliced peaches, and shelled pistachios in a large bowl. Dressing: To make the dressing, whisk together the maple syrup, balsamic vinegar, olive oil, salt, and pepper. Pour the dressing over the salad and gently toss it all together.
