Ingredients: 1 lb ground beef. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 can 14.5 oz diced tomatoes. 4 cups beef broth. 1 cup cooked rice. 1 tsp Italian seasoning. Salt and pepper to taste. Shredded cheese, for topping. Fresh parsley, chopped, for garnish.
Instructions: Over medium-low heat, brown the ground beef in a large pot until it is no longer pink. Cut up some onion, garlic, and bell pepper and add them to the pot. Cook the vegetables until they get soft. It's time to add the beef broth, cooked rice, diced tomatoes, and Italian seasoning. Add pepper and salt to taste. Slowly cook the soup for 15 to 20 minutes to let the flavors mix. Shred cheese and chop fresh parsley on top and serve hot.
