A succulent guinea hen roasted to perfection with aromatic herbs and citrus, served with a luscious pan sauce.
Ingredients: 1 guinea hen, cleaned and pat dry. 2 tablespoons olive oil. Salt and pepper to taste. 2 cloves garlic, minced. 1 lemon, sliced. 1 tablespoon chopped fresh rosemary. 1/2 cup chicken broth. 1/4 cup white wine. 1 tablespoon butter. Fresh parsley for garnish.
Instructions: Warm the oven up to 190C 375F. Add salt, pepper, and minced garlic to the guinea hen after rubbing it with olive oil. Fill the hole with fresh rosemary and lemon slices. Chicken broth and white wine should be added to the pan after putting the guinea hen in it. Place the hen in an oven that has already been heated. Roast for about an hour, basting it with the pan juices every so often, until it is fully cooked and golden brown. Take the guinea hen out of the oven and put it on a platter to serve. Give it some time to rest. Put the pan juices into a small saucepan and heat them until they start to simmer. Add the butter and stir it in until it melts and the sauce gets a little thicker. Cut the guinea hen into pieces and serve it with the sauce from the pan. Add fresh parsley as a garnish. Have fun with your Guinea Hen Delight!
