I have been threatening/promising to start this blog for a long time, so I am finally doing it. I'd like to use this blog as both a store to keep the recipes I've amassed from childhood and my travels and a way of sharing them with friends and other interested people. I was born in Gujarat, India, and I grew up in the countryside of England. I have lived in the Netherlands and now live in the US, that along with a mix of amazing friends from around the world and my love of travel, I've managed to amass a cornucopia of vegetarian and vegan recipes from around the world. Having said that, lets get started! Here's a twofer from my home state in India, its a go-to for me when I get home and really don't want to cook but when my local take out delivery guy is getting way too familiar with my orders! It's pretty healthy, low in carbs (for veggie food) and vegan. Rajma (red kidney bean stew) - 1 can red kidney beans - I can chopped tomatoes - 1/4 teaspoon salt (to taste) - 1 teaspoon coriander powder - 1/2 - 3/4 teaspoons chili powder - 1/2 small diced onion - tablespoon canola or vegetable oil dice up the onion into small pieces open the cans of tomatoes and beans get a pan, add some oil and let it heat up once the oil is hot, add onions, let them cook till slightly translucent add tomatoes add the salt, chili powder and coriander powder and stir and let it cook for a bit (about 3/4 mins) drain and rinse the beans add to pan and stir well cover and cook for a further 5 mins or till the beans are cooked garnish with fresh coriander (optional) Eat on own, with rice or with yogurt (makes it not vegan), or with toast/naan. If you swap out the red kidney beans for chickpeas, its chickpea stew - TA-DA!
