I mean, I’m not mad. I’m slightly annoyed because it feels like, even though it almost certainly wasn’t intended, they thought I just didn’t know about how to be vegan and have it be cheap?

I have a Willbreaker under my control and my opponent has Gideon, Ally of Zendikar. They use Gideon's +1 and I use an instant on Gideon while he's a creature, thus gaining control of him. At the end of turn, when Gideon ceases to be a creature, do I still have control of him or does he returns to my opponent's control? And, whatever the answer, does it apply the same way to manlands?

You keep control of Gideon or the creature land or whatever temporary creature you managed to steal for as long as you control Willbreaker. It doesn’t matter that they stop being creatures when the turn ends, Will only cares that they’re creatures when the trigger goes on the stack and when it resolves.

During a Commander 4-way game, a player gains control of another player's commander, Surrak Dragonclaw, with their own commander, Rubinia Soulsinger. Does damage dealt with Surrak while he's controlled by another player count as commander damage? If so, would it be Surrak's commander damage or Rubinia's? Thanks in advance!

A commander always deals commander damage and always deals its own commander damage.

For example, if you take player A’s Surrak, which has already dealt 18 damage to player B, then attack player B with it, that will add to the same commander damage total, meaning that player B will lose the game.
