Three-Meat Broccoli Casserole
I guess you can say this is a take on a "classic." I can't say where I got the initial recipe from, but I used to make this with cooked pieces of chicken breast only. This batch came about because the boy and I made a pizza that had pre-cubed and pre-cooked ham and smoked sausages on it, and we had leftovers from that, as well as cans of chunk chicken meat. I combined them all together in my "normal" recipe for this, and created what was deemed an instant "repeat recipe" from both him and me. I'll try to get the recipe down as best as I can, but to be honest, I wasn't paying too much attention to what I was doing.
1 can (12+ oz) chunk chicken, drained
1/2 smoked sausage (the kind that comes in two links, or one horseshoe-shaped linked, cut in half,) sliced and quartered
pre-cooked ham cubes 1/2 to 1 lb (usually found with the lunch meat in the supermarket)
1 lb broccoli florets, cut into "bite-sized pieces"
1 cup mild cheddar cheese
2 10+ oz cans of condensed cream of chicken soup
1 box (16 oz) of pasta of your choice (I used gemelli)
Preheat oven to 350'F and grease a 9" x 13" casserole or baking dish.
In a large skillet, add in the smoked sausage, ham cubes, chunk chicken, and onions. Sautee over medium heat until onions are translucent, using a spatula to stir the mixture and separate the chunk chicken. Set aside to cool (place in the fridge for faster cooling time.)
In a pot, bring water to boil, and add in you're pasta. Cook until tender, strain, and rinse in cool water until the pasta is no longer warm. Toss a few times in the strainer to remove excess water.
In a large mixing bowl, add in the meats and onion mixture, the pasta, the broccoli, mozzarella cheese, cream of chicken soup, and all of the spices. Mix well until all ingredients are well combined, and the soup has coated everything.
Pour into the casserole dish, and smooth out as evenly as possible. Sprinkle the cheddar cheese on top.
Place in the oven and cook uncovered for 30 - 45 minutes.
