Indulge in the rich and comforting flavors of Chicken Cordon Bleu with this delicious soup. Creamy broth, shredded chicken, diced ham, and melted Swiss cheese come together to create a bowl of warmth that's perfect for any day.
Ingredients: 1 lb boneless, skinless chicken breasts, cooked and shredded. 6 cups chicken broth. 1 cup ham, diced. 1 cup Swiss cheese, shredded. 1/2 cup onion, finely chopped. 1/2 cup celery, finely chopped. 1/2 cup carrot, finely chopped. 1/4 cup all-purpose flour. 1/4 cup unsalted butter. 2 cups milk. 1 cup heavy cream. 2 cloves garlic, minced. 1 tsp Dijon mustard. Salt and pepper to taste. 1 tbsp olive oil. Chopped fresh parsley for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the carrot, onion, and celery. Cook the vegetables in oil until they get soft. Add the minced garlic and cook for another one to two minutes, until the garlic smells good. Melt the butter in the same pot. To make a roux, stir in flour. To make golden brown, cook for two to three minutes. Slowly add the milk, heavy cream, and chicken broth, making sure there are no lumps left. Shred the chicken, dice the ham, and add the Dijon mustard to the pot. Let it cook for 15 to 20 minutes so the flavors can blend. Shred the Swiss cheese and mix it in until it melts and is smooth. Add pepper and salt to taste. Serve hot with fresh parsley chopped on top. You can enjoy the comforting tastes of Chicken Cordon Bleu in soup form!
