This gluten-free hamburger stew is filling and cozy, just what you need for a cold weeknight dinner. It's full of ground beef, vegetables, and tasty herbs that were all cooked together in a slow cooker to make it easy and tasty.
Ingredients: 1 lb ground beef. 1 onion, chopped. 3 cloves garlic, minced. 4 carrots, peeled and sliced. 4 potatoes, peeled and diced. 1 can 14.5 oz diced tomatoes. 4 cups beef broth. 1 teaspoon dried thyme. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: To cook the ground beef, add chopped onion and minced garlic to a skillet. Cook until the beef is fully cooked and the onion is soft. Put the slow cooker on high and add the cooked beef mixture. The slow cooker should have diced tomatoes, beef broth, dried thyme and oregano, salt, and pepper. Use a stir to mix. Put the lid on and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the vegetables are soft. If you need to, change the seasonings before serving.
