Handpie stuffed with cheesy mashed potatoes.
Um. It was maybe a cup of flour and a 1/2 teaspoon of salt mixed with 3 Tbs margarine? And then cold water drizzled in a little at a time while mixing just until there was enough to stick it together.
And then we put it in the fridge and went and did other stuff. Next day, we rolled it out, cut a circle, and brushed the rim with egg yolk. Put in a few Tbs of leftover mashed potatoes, folded it over and fork crimped it shut. Brushed the top with yolk and shoved it into 375F oven until lightly browned and filling hit 200F.
It was really, really good. From this much flour, we made two large pies. Could probably have rolled dough thinner and made 3.
Update:
Blueberries and dates also make good filling.
Just break the date in half, take out the pit, stuff 1 or 2 blueberries in there, fold shut. Put in pastry, poke steam holes, bake until golden or the blueberry juice starts oozing out. COOL COMPLETELY!!!
Boiling blueberries are HOT and also they taste better after they cool off
I left out the egg this time and it was no problem.
