A delicious and easy hands-free cashew chicken cooked to perfection in a slow cooker, resulting in tender chicken with a flavorful sauce and crunchy cashews.
Ingredients: 1 lb chicken breast, diced. 1/4 cup soy sauce. 2 tbsp hoisin sauce. 1 tbsp honey. 2 cloves garlic, minced. 1 tsp ginger, grated. 1/2 cup cashews, toasted. 1 green bell pepper, diced. 1 red bell pepper, diced. 2 green onions, sliced. 1 tbsp cornstarch. 1/4 cup water. Cooked rice, for serving.
Instructions: Diced chicken, soy sauce, hoisin sauce, honey, minced garlic, and grated ginger should all be put in a slow cooker. Leave the lid on and cook on low for 4 to 5 hours or high for 2 to 3 hours, until the chicken is fully cooked. In a small bowl, mix the cornstarch and water together until they are smooth. Add the diced bell peppers and stir them in. Keep cooking on high for another 30 minutes, or until the sauce gets thicker. Toast the cashews and cut up the green onions. Put it on top of cooked rice.
