Ingredients: 4 cups vegetable broth. 1 can 28 oz crushed tomatoes. 2 cups frozen hash browns. 1 onion, diced. 2 cloves garlic, minced. 1 teaspoon dried basil. 1 teaspoon dried oregano. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon red pepper flakes optional. 1/2 cup heavy cream. Fresh basil leaves for garnish.
Instructions: In a large pot, saut diced onion and minced garlic until softened. Add vegetable broth, crushed tomatoes, frozen hash browns, dried basil, dried oregano, salt, black pepper, and red pepper flakes if desired. Bring to a boil. Reduce heat and let it simmer for 15-20 minutes or until hash browns are cooked through. Stir in heavy cream and simmer for an additional 5 minutes. Adjust seasoning to taste. Serve hot, garnished with fresh basil leaves.
