Savor the smoky twist on the tropical flavors of Huli Huli chicken. Pineapple, soy sauce, and smoke combine to create a delectable flavor that will take you to a paradise of flavors.
Ingredients: 4 lbs chicken thighs, bone-in and skin-on. 1 cup pineapple juice. 1/2 cup soy sauce. 1/4 cup ketchup. 1/4 cup brown sugar. 3 tablespoons rice vinegar. 2 tablespoons sesame oil. 1 tablespoon ginger, minced. 1 tablespoon garlic, minced. 1 teaspoon smoked paprika. 1 teaspoon black pepper. Wood chips for smoking.
Instructions: In a bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, rice vinegar, sesame oil, ginger, garlic, smoked paprika, and black pepper to create the Huli Huli sauce. Place chicken thighs in a large resealable bag and pour half of the Huli Huli sauce over them. Marinate in the refrigerator for at least 2 hours, preferably overnight. Prepare your smoker with wood chips according to the manufacturer's instructions and preheat it to 225F 107C. Remove chicken from the marinade and let excess drip off. Discard used marinade. Place chicken on the smoker grates and smoke for about 2-3 hours or until the internal temperature reaches 165F 74C. Baste the chicken with the remaining Huli Huli sauce every 30 minutes during smoking. Once done, remove the smoked Huli Huli chicken from the smoker and let it rest for a few minutes before serving.

These Hawaiian BBQ Chicken Wraps are a delicious blend of sweet and savory flavors, featuring tender shredded chicken, juicy pineapple chunks, and a tangy barbecue sauce. With the added crunch of red bell peppers and red onions, as well as the creamy mozzarella cheese, these wraps are a perfect combination of textures and tastes. Quick to prepare and full of tropical flair, they make for a satisfying and flavorful meal.
Ingredients: 2 cups cooked and shredded chicken. 1 cup pineapple chunks. 1/2 cup red bell pepper, thinly sliced. 1/2 cup red onion, thinly sliced. 1/2 cup mozzarella cheese, shredded. 1/4 cup fresh cilantro, chopped. 1/4 cup barbecue sauce. 4 large flour tortillas.
Instructions: Put the barbecue sauce and shredded chicken in a large bowl. Mix until the chicken is covered all over. Place the flour tortillas on a clean surface. Spread out the chicken sauce evenly on each tortilla, leaving about an inch of space around the edges. On top of the chicken, put slices of red bell pepper, red onion, pineapple chunks, shredded mozzarella cheese, and fresh cilantro. Fold the tortillas' sides in, and then roll them up tightly. If necessary, use toothpicks to keep the wraps together. Toast or grill pan that doesn't stick should be heated over medium heat. Arrange the wraps on the pan with the seam facing down. Cook for two to three minutes on each side, or until they are golden brown and crispy. Take them off the heat and let them cool for one minute. Then, cut them in half diagonally. Enjoy the Hawaiian BBQ Chicken Wraps while they're still warm.

Hawaiian BBQ chicken with a sweet and sour pineapple marinade that tastes great on the grill. A taste of the tropics at your barbecue.
Ingredients: 4 boneless, skinless chicken breasts. 1 cup pineapple juice. 1/2 cup soy sauce. 1/4 cup ketchup. 1/4 cup brown sugar. 2 cloves garlic, minced. 1 teaspoon ginger, grated. 1/2 teaspoon black pepper. 1/4 teaspoon cayenne pepper optional. 1 fresh pineapple, peeled and sliced.
Instructions: In a bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, minced garlic, grated ginger, black pepper, and cayenne pepper. Place chicken breasts in a resealable plastic bag and pour half of the marinade over them. Seal the bag and refrigerate for at least 30 minutes or overnight for best flavor. Preheat the grill to medium-high heat. Remove chicken from the marinade and grill for 6-8 minutes per side, or until fully cooked and grill marks appear. While grilling, baste the chicken with the reserved marinade for added flavor. In the last few minutes of grilling, place pineapple slices on the grill and cook until they have grill marks and are slightly caramelized. Serve the grilled Hawaiian chicken with the grilled pineapple slices on top. Enjoy!

Instructions: Preheat oven to 375F 190C. In a bowl, mix shredded chicken with diced pineapple and BBQ sauce. Place a spoonful of the chicken mixture onto each tortilla, sprinkle with mozzarella cheese, cilantro, and red onion. Roll up tightly and place seam side down on a baking sheet lined with parchment paper. Lightly spray the taquitos with cooking spray. Bake for 15-20 minutes or until crispy and golden brown. Serve hot with extra BBQ sauce for dipping.
