Ingredients: 1 lb ground chicken. 1 tablespoon coconut oil. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 tablespoon fresh ginger, minced. 1/4 cup coconut aminos. 2 tablespoons almond butter. 1 tablespoon rice vinegar. 1 teaspoon sesame oil. 1/2 teaspoon red pepper flakes adjust to taste. Salt and pepper to taste. 8-10 large lettuce leaves such as iceberg or butter lettuce. 1/4 cup chopped green onions. 1/4 cup chopped fresh cilantro. 1/4 cup chopped roasted cashews optional.
Instructions: In a big skillet, warm the coconut oil over medium-high heat. Add the chopped onion and cook for 34 minutes, or until transparent. Add the ginger and garlic powder, stir, and cook for a further one to two minutes, or until aromatic. When the ground chicken is cooked through and no longer pink, add it to the skillet and cook, breaking it up with a spatula, for about five to seven minutes. Combine the coconut aminos, almond butter, sesame oil, rice vinegar, red pepper flakes, salt, and pepper in a small bowl. After adding the sauce to the skillet with the cooked chicken, stir everything together. Cook until thoroughly heated, 2 to 3 minutes more. Spoon the chicken mixture into each lettuce leaf before serving. If desired, sprinkle roasted cashews, chopped cilantro, and green onions on top.
