For breakfast or brunch, try this flavorful and filling Roadhouse Vegan Breakfast Hash. It has diced potatoes, crumbled tofu, and a vibrant mixture of vegetables that are spiced with paprika and other seasonings.
Ingredients: 1 block tofu, pressed and crumbled. 1 onion, diced. 1 bell pepper, diced. 2 cloves garlic, minced. 2 cups diced potatoes. 2 tablespoons olive oil. 1 teaspoon smoked paprika. 1/2 teaspoon turmeric. 1/2 teaspoon cumin. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Heat the olive oil in a big skillet over medium heat. Add the diced potatoes and cook for 8 to 10 minutes, or until they begin to brown. To the skillet, add the minced garlic, bell pepper, and diced onion. Saut the vegetables, stirring periodically, until they are soft. Toss in the crumbled tofu, cumin, turmeric, smoked paprika, salt, and pepper. Mix thoroughly to blend. Cook the tofu for a further five to seven minutes, or until it is thoroughly heated and beginning to crisp up. When ready to serve, remove from the heat and sprinkle with fresh parsley.
