A few black and white photos of some old school places and some newer ones. @kreuzmarket in Lockhart shows the essence of what the old school pit rooms were but look closely at the sign and you can order online - a testament to the evolution of this BBQ joint and why it has been around so long - the ability to adapt and change with the times. The second pic is the @luling_city_market sign in the pit room with decades of smoke as a patina on each small letter that was placed there by possibly one of the guys that's been working there the last 30 years and you can now follow them on Facebook and another piece of the evolution of this old school joint to modern advertising. The third picture is of the old brick and concrete pits @lumsbbq in Junction where many slabs of ribs and mounds of brisket have been smoked over the years. Their footprint has grown as their building has also evolved into a larger and larger dining space for these pits to serve. The next is a pic of the sunlight shining through on one of the smokers @conveniencewest_bbq in Marfa almost as if angels were smiling down and blessing the meats therein.
