This Apple Cider Glazed Pot Roast is a tasty and comforting dish that's great for a cozy family dinner. Tender beef, fragrant herbs, and a sweet-and-sour apple cider glaze come together to make a delicious meal that will warm your heart and stomach.
Ingredients: 3 lbs beef chuck roast. Salt and pepper to taste. 2 tablespoons olive oil. 1 onion, sliced. 3 cloves garlic, minced. 1 cup apple cider. 1/2 cup beef broth. 2 tablespoons Worcestershire sauce. 2 tablespoons brown sugar. 1 tablespoon Dijon mustard. 2 sprigs fresh rosemary. 2 sprigs fresh thyme.
Instructions: Preheat oven to 325F 160C. Season beef roast with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef roast on all sides until browned, about 4-5 minutes per side. Remove from the pot and set aside. In the same pot, add sliced onion and minced garlic. Cook until softened, about 3-4 minutes. Add apple cider, beef broth, Worcestershire sauce, brown sugar, and Dijon mustard. Stir well to combine. Return the beef roast to the pot. Add rosemary and thyme sprigs. Cover the pot and transfer to the preheated oven. Roast for about 2.5 to 3 hours, or until the beef is tender and easily pulls apart with a fork. Occasionally baste the beef with the cooking juices to keep it moist. Once done, remove the pot from the oven and let the roast rest for about 10 minutes before slicing. Serve the sliced pot roast with the apple cider glaze from the pot.
