These Paleo-friendly zucchini fritters are packed with flavor and perfect for a wholesome meal or snack. They're crispy on the outside and tender on the inside, complemented by the creamy avocado crema.
Ingredients: 2 medium zucchinis, grated. 1/2 cup almond flour. 2 eggs. 2 cloves garlic, minced. 2 green onions, thinly sliced. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 1 avocado, ripe. 1/4 cup coconut cream. 1 tablespoon lime juice. 1 tablespoon cilantro, chopped. 1 tablespoon olive oil, for frying.
Instructions: Grated zucchini, almond flour, eggs, minced garlic, sliced green onions, salt, and black pepper should all be combined in a big bowl. Blend thoroughly. Mash the avocado in an other bowl. Stir in chopped cilantro, lime juice, and coconut cream. For the avocado crema, blend until smooth. In a skillet over medium heat, warm the olive oil. Form the zucchini mixture into patties using a 1/4 cup scoop. Using a spatula, gently flatten the patties after placing them in the skillet. Fry the fritters for three to four minutes on each side, or until they are cooked through and golden brown. After cooking, move the fritters to a plate covered with paper towels so that any leftover oil can be drained. Top each warm batch of zucchini fritters with a dollop of avocado crema. Have fun!
