This colorful winter salad is full of ingredients that will make you feel better and help you get over the winter blues. Greens, sweet potatoes, chickpeas, and almonds all work together to make a hearty, satisfying meal that will make you feel better during the colder months.
Ingredients: 2 cups mixed greens e.g., spinach, kale, arugula. 1/2 cup roasted sweet potatoes, cubed. 1/2 cup chickpeas, cooked. 1/4 cup sliced red onions. 1/4 cup sliced almonds, toasted. 1/4 cup dried cranberries. 1/4 cup crumbled feta cheese. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: Start by heating the oven to 400F 200C. Add salt and pepper to the sweet potato cubes and toss them in 1 tablespoon of olive oil. Roast them for 20 to 25 minutes, or until they are soft and slightly crispy. To make the dressing, mix the last tablespoon of olive oil and the balsamic vinegar in a small bowl with a whisk. Add pepper and salt to taste. Cut up the roasted sweet potatoes, chickpeas, red onions, toasted almonds, dried cranberries, and crumbled feta cheese. Put them all in a large salad bowl. Spread the dressing out on the salad and gently toss it to cover everything. Serve the winter salad right away and enjoy a better mood!
