Enjoy these tasty Manicotti Crepes that were made with tips from a restaurant chef. They are rolled up in soft crepes and baked with marinara sauce and mozzarella cheese. Inside are creamy ricotta and Parmesan cheese. A delicious dish with Italian influences that will satisfy your hunger!
Ingredients: 1 cup all-purpose flour. 1 1/2 cups whole milk. 2 large eggs. 1/4 teaspoon salt. 2 tablespoons unsalted butter, melted. 1 cup ricotta cheese. 1/2 cup grated Parmesan cheese. 1/4 cup chopped fresh parsley. 1/4 teaspoon black pepper. 1 cup marinara sauce. 1/2 cup shredded mozzarella cheese. Fresh basil leaves for garnish.
Instructions: Put the flour, milk, eggs, salt, and melted butter in a blender and blend them together. Mix until it's smooth. Put a nonstick skillet on medium heat and use cooking spray or a little butter to lightly coat it. Add a little of the crepe batter to the pan and swirl it around to cover the bottom evenly. The crepe is done when the edges begin to lift and the center is firm. Turn the food over and cook for another one to two minutes on the other side. Do it again with the rest of the batter to make 8 crepes. Put the ricotta cheese, Parmesan cheese, black pepper, and chopped parsley in a bowl. Combine well. Put a small amount of the cheese mix in the middle of each crepe and roll them up. In a baking dish, put the rolled crepes seam-side down. Spread marinara sauce on top of the crepes and top with mozzarella cheese shreds. Set the oven to 375F 190C and bake the crepes for 20 to 25 minutes, or until the cheese is melted and bubbly and the crepes are warm all the way through. Add fresh basil leaves on top and serve hot.
