Old recipe, new pics, and is it just me or are these ones STUNNING? I’m not 100% happy with all the photos I take- some of them are ‘good enough’, and occasionally mildly embarrassing, but this one makes me happy. 

It’s our Christmas Lima Bean Soup, using Christmas Limas from #ranchogordo with baby bok choy and some beech mushrooms. The broth is so flavorful and meaty, the beans are perfectly cooked, the bok choy adds a delicate crunch. It’s a dish that I get excited to eat the leftovers - and I’m really not a leftover type of person.

The Turkey Craw Bean produces 4-6" pods that are delicious when young, green, and snappy. When used as a dry bean, they are sweet, rich, buttery, and meaty in taste and texture. The seeds are a beautiful frosted brown and tan. The vines are often grown in cornfields. The story goes: this seed was found in the craw of a turkey brought home by a hunter in the 1800s. Many report he was an enslaved African American man. Please share more info about his story if you have it! This bean has been designated by Slow Food as an outstandingly tasty, culturally important, and endangered heirloom from Virginia, North Carolina, and Tennessee, and is listed in their Ark of Taste as a way to invite everyone to take action to help protect it. Today was a bean day. 1. Potawatomi Pole Lima (Phaseolus lanatus), a beautiful and prolific lima from the Potawatomi Nation in Wisconson. 2. Fagiolina del Trasimeno (Vigna unguiculata) is an endangered Italian cowpea from the hills around Lake Trasimeno in Umbria, and is now protected by Slow Food Italy. 3. Borlotto Lingua di Fuoco (Phaseolus vulgaris) is another Italian heirloom that I learned about in a recipe for Succotash that @rbsayet sent me from her great great uncle Harold Tantaquidgeon, who was a Mohegan chief. This Native American species (P. vulgaris) of bean was adopted and adapted by Italians and then again adopted for use in this Mohegan recipe. As an Italian who grew up on Mohegan land, I'm excited to care for this bean as well.
