Julie’s Warm Fudge-Filled Cheesecake
Crust:
1/2 c butter, softened
1/3 c sugar
1 c flour
1 tsp vanilla
2/3 c pistachios or macadamia nuts, chopped
Filling:
24 oz cream cheese, softened
1 1/2 c sugar
4 eggs
1 tbs vanilla
12 oz chocolate chips
Beat butter until creamy. Add sugar, then gradually add flour.
Stir in vanilla and nuts. Press crust mixture into bottom and 1.5 inches up sides of a 9 inch springform pan.
Bake 350F for 12-15 min until golden. Cool.
Beat cream cheese until fluffy. Gradually add sugar, then add eggs one at a time until yellow disappears. Stir in vanilla. Do not over mix.
Pour half batter into crust. Sprinkle chocolate morsels within 3/4 inch of edge. Add remaining batter (start at outer edge and work in to center).
Bake 350F for 1 hour. Cool for 1 hour. Serve warm with whipped cream.
