Ingredients: 1 cup quinoa. 2 cups water. 1 cup diced cucumber. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/4 cup chopped fresh parsley. 1/4 cup hemp seeds. 2 tablespoons olive oil. 2 tablespoons lemon juice. Salt and pepper to taste.
Instructions: Rinse the quinoa well with cold water and let it drain well. Bring 2 cups of water to a boil in a saucepan. Turn down the heat, add the quinoa, cover, and simmer for 15 minutes, or until the quinoa is soft and the water is absorbed. Take it off the heat and let it cool down. Put cooked quinoa, cucumber, tomatoes, red onion, parsley, and hemp seeds in a large bowl. To make the dressing, mix the lemon juice, salt, pepper, olive oil, and olive oil in a small bowl with a whisk. Add the dressing to the salad and gently toss to mix. Serve right away or put in the fridge to enjoy later.
