Ingredients: 2 lbs pork loin, boneless. 1 tablespoon olive oil. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1 teaspoon dried sage. Salt and pepper to taste. 4 apples, peeled, cored, and sliced. 2 tablespoons maple syrup. 1/2 teaspoon cinnamon. 1/4 teaspoon nutmeg. 1 tablespoon butter, melted.
Instructions: Before you start cooking, heat the oven to 375F 190C. Add salt, pepper, dried thyme, dried rosemary, and dried sage to the pork loin after rubbing it with olive oil. Season the pork loin and put it in a roasting pan. Roast it in a hot oven for 25 to 30 minutes, or until the internal temperature reaches 145F 63C. While the pork is roasting, get the applesauce ready to go. Put the sliced apples, maple syrup, cinnamon, nutmeg, and melted butter in a bowl. Add toss to cover evenly. Place the apple mixture on a baking sheet and roast it in the oven for 20 to 25 minutes, or until the apples are soft and have a little caramelized on top. Let the pork rest for a few minutes after it's done cooking before cutting it. On the side, put the roasted apple sauce with the herb pork.
