Ingredients: 4 boneless pork chops. 1/2 cup shredded Asiago cheese. 1/4 cup cream cheese. 2 cloves garlic, minced. 1/4 cup fresh spinach, chopped. 2 tablespoons hickory smoked salt. 1 teaspoon black pepper. 1 tablespoon olive oil.
Instructions: Preheat your oven to 375F 190C. In a mixing bowl, combine the shredded Asiago cheese, cream cheese, minced garlic, and chopped fresh spinach. Mix well to create the stuffing. Using a sharp knife, make a horizontal slit in each pork chop to create a pocket for the stuffing. Season the inside of each pork chop with hickory smoked salt and black pepper. Stuff each pork chop with the prepared cheese and spinach mixture, ensuring it's evenly distributed. Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, add the stuffed pork chops and sear for 2-3 minutes on each side until they develop a golden brown crust. Transfer the skillet to the preheated oven and bake the stuffed pork chops for 20-25 minutes or until they reach an internal temperature of 145F 63C. Remove the skillet from the oven, cover the chops with foil, and let them rest for 5 minutes to allow the juices to redistribute.
