It’s Wednesday, High Wire style! • • High Wire Distilling is located in Charleston, SC and specializes in spirits made from locally sourced, heirloom varieties of Rye, Corn, Barley, Sugarcane and botanicals. • • This is their “Southern Revival” Rye made from 75% Abruzzi Rye grown in the Carolinas for centuries, 25% Heirloom White Corn. All grains are milled in sight. • • The grains are single distilled using a 2000L copper hybrid column still and aged in 15G virgin charred oak for 12 months, finished in 59G charred oak for whenever Scott feels its ready. The Rye is then proofed down to bottle strength with charcoal filtered S. Carolina water.
