Amber is a bug who lived in Hallownest before it fell to the infection. Their family was having trouble getting by, so Amber signed up for some experiments in the Soul Sanctum to help their family get by.
As you can see, they were less than ethical. Amber is now a shell of their former self, hunting infected bugs with a bloodlust. However over time Mori was able to calm them down and help them recover.

Amber as seen in Subnautica is a survivor of a ship that crashed on Planet 4546B. After a few months of them, Koshiro, and one other surviving on the planet, they were seperated form the others because of a leviathan attack.
Desperatly, they followed architect buildings to a structure that was used to make prototype warpers, sensing Amber was a candidate to be turned into one, it captured them and turned them into, this.
Breath of the Wild Amber

Amber in Breath of the Wild is mercifly relitavly stable. They were the second candidate to become Princess Zeldas knight before Link was found to be the Hero of the Wilds. They were raised by a Goron named Arlo and is incredibly strong, using a giant hammer as their main weapon.
Durring the calamity, they and other high ranking knights helped the people of Hyrule Castle escape, fending off multiple guardians. In the end they were defeated and thrown into a pool of malice, and would have been killed if they had not hold onto life long enough to be effected by Princess Zeldas sealing power.
Instead of being killed, they were warped into a being similar to a blight, defending Hyrule Castle.
