Ingredients: 2 cups all-purpose flour. 1/2 cup vegan butter, softened. 1/2 cup cane sugar. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/4 cup dairy-free chocolate chips. 1/4 cup chopped nuts e.g., almonds, pecans. 1/4 cup dried cranberries.
Instructions: Preheat oven to 350F 175C. In a large mixing bowl, cream together vegan butter, cane sugar, maple syrup, and vanilla extract until smooth. Add flour, baking powder, and salt to the bowl. Mix until well combined. Fold in chocolate chips, chopped nuts, and dried cranberries. Using a cookie scoop or tablespoon, form dough into balls and place them on a lined baking sheet, leaving space between each cookie. Gently flatten each cookie with the back of a spoon or your fingers. Bake for 10-12 minutes or until edges are golden brown. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
