Corned beef hash is a hearty and satisfying dish that makes excellent use of leftover corned beef. It's a classic comfort food, perfect for a leisurely weekend breakfast or brunch.
Ingredients: 2 cups cooked corned beef, diced. 2 cups potatoes, diced. 1 onion, diced. 2 cloves garlic, minced. 2 tablespoons olive oil. Salt and pepper to taste. 1/2 teaspoon paprika. 2 tablespoons chopped fresh parsley optional. 4 eggs optional, for serving.
Instructions: Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until they start to brown, stirring occasionally, about 8-10 minutes. Add diced onions and minced garlic, cook until onions are translucent. Add diced corned beef to the skillet, mix well with potatoes and onions. Season with salt, pepper, and paprika. Cook for another 5-7 minutes until everything is heated through and slightly crispy. If desired, make four wells in the hash and crack an egg into each well. Cover and cook until eggs are set to your liking. Garnish with chopped fresh parsley if using. Serve hot and enjoy!
