really pleased to have discovered a houmous recipe we're happy with - basically
can of chickpeas
salt and black pepper
"some" water (for variable thickness)
you think that's enough garlic/lemon juice/tahini? hell no that's not enough garlic/lemon juice/tahini
oh cool, smoked paprika is here, now the party's really starting
splash of olive oil because why tf not
stick blender in a bowl, whizz that stuff until it's how you like it but a little bit runnier - because it thickens a bit once it's made as the chickpea purée soaks up some of the water
do not ask us about exact quantities, we were brought up by a jewish mother and it's all about feel, for some reason
anyway it's really good now that we've sussed out the right feel and we hope this is a bit useful (but see 4, very beautiful very powerful - shop houmous in the UK seems to be just chickpeas and water with homeopathic doses of anything else and it's not even fit for wallpapering)
also we spent some of our childhood in Israel (thank the gods we didn't have to stay) and let us tell you, chickpeas in houmous are really just the substrate to deliver the garlic/lemon juice/tahini which are the ogs
