I used to think I overate when I see friends who are more active than myself finish their meals in a few bites. I started questioning if I was fat. I started to believe I was far for a brief moment & thought it was due to overeating. My perception changed when I spoke with a @MavenClinic nutritionist. I explained that I typically eat vegan, and I often need to eat multiple bowls to feel satiated. I eat lots and lots of vegetables with plant based protein and plant based fat, but it just seems like I'm eating so much compared to friends who run more than me. "But that is how you are supposed to eat." Said the nutritionist. . . . Ever since I became a #TIUgirl, I started following the vegan #TIUnutritionPlan. Sometimes, I would notice that the veggie bulk makes it extremely difficult to close my Snapware containers. Sometimes, the recipes will call for #UnlimitedVeggies. I happily load up on kale and whatever veggies lurking around my house. (I feel so accomplished when I fulfill the prophecy of #NoVeggiesLeftBehind.) Sometimes, I am surprised at how large a serving could look but how it fits me just right. For example, this #KnKaleSalad (pictured) kept me so satiated, I couldn't be tempted at a potluck even if I wanted to try everything. 💃 . . . I guess the lesson is, don't be afraid to load up on veggies. Don't be self conscious about eating like a goat. 🐐 It served me so well when I was surrounded by carby and tempting foods!
