A hearty Hungarian soup made with tender beef, potatoes, and a tasty broth made with paprika. On cold days, this dish is perfect for keeping you warm.
Ingredients: 500g beef chuck, diced. 2 large potatoes, peeled and cubed. 1 onion, chopped. 2 cloves garlic, minced. 2 tablespoons tomato paste. 1 tablespoon paprika. 1 teaspoon caraway seeds. 1 bay leaf. Salt and pepper to taste. 4 cups beef broth. 2 tablespoons vegetable oil. Chopped parsley for garnish.
Instructions: In a large pot, heat vegetable oil over medium-high heat. Add diced beef and cook until browned on all sides. Add chopped onion and minced garlic, saut until softened. Stir in tomato paste, paprika, caraway seeds, bay leaf, salt, and pepper. Add cubed potatoes and beef broth, bring to a boil. Reduce heat to low, cover, and simmer for about 30 minutes or until beef and potatoes are tender. Adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
