Lots of Garden Greens = Lots of Yummy Salads!
After being away for a few weeks it was exciting to come home to a flourishing garden. The lettuce was bountiful and ready to be picked. I was so happy to see that my Kale had survived, until this batch I had yet to grow a successful kale plant. I found this rather frustrating as everyone says, "Kale is so easy to grow!" Looks like a lot of salads are in my near future! When I left I thought my Basil was nearing it's end but upon my return it had grown more then double in size. What am I going to make with all this basil!?!

I picked a cucumber off the vine to julienne along with some carrots, sprouts, and the leftover Not Tuna from my Collard Wraps made a perfect Nori roll. I made some raw macadamia nut rice and spread that on nori with some chopped mango and avocado.
