Another great option for thai peppers, quick and easy to make this simple and spicy salad is both cooling and warming at once. Great for a main dish or as a side.
Thai Cucumber Salad with Nuts
Serves 4
Ingredients
1/4 C fresh lime juice
1 TBSP coconut aminos
2 Thai chiles, thinly sliced
1 small garlic clove, finely grated
2 TBSP coconut oil
3 English cucumbers—halved lengthwise, seeded and sliced crosswise 1/4 inch thick
1 C packed cilantro, chopped
1/2 C raw teriyaki almonds, peanuts, or cashews, chopped
1/2 small red onion, very thinly sliced
Sea salt
Preparation
1. In a small bowl, whisk the lime juice with the coconut aminos, coconut nectar, chiles, garlic and oil.
2. In a large bowl, toss the cucumbers, cilantro, nuts and onion. Add the dressing and toss to coat.
3. Season with salt and serve right away.
