If you do these steps, you'll get hard-boiled eggs with perfectly round yolks that are great for salads, sandwiches, or snacks. The bath in ice water makes it easier to peel.

Instructions: Place the eggs in a single layer in a saucepan. Add enough water to the saucepan to cover the eggs by about an inch. Place the saucepan on the stove over medium-high heat and bring the water to a boil. Once the water reaches a rolling boil, reduce the heat to low and let the eggs simmer for 9-12 minutes for hard-boiled eggs with perfectly centered yolks. While the eggs are simmering, prepare a bowl of ice water. After the desired cooking time, immediately transfer the eggs to the bowl of ice water to stop the cooking process. Let the eggs sit in the ice water for at least 5 minutes to cool completely. Gently tap each egg on a hard surface to crack the shell, then roll it between your hands to loosen the shell. Peel the eggs, starting from the wide end where there's usually an air pocket, which makes peeling easier. Slice the hard-boiled eggs in half lengthwise to reveal perfectly centered yolks. Serve the eggs as desired, garnished with salt, pepper, or your favorite seasonings.
