For the icing:. 1 cup powdered sugar. 2 tablespoons milk. 1/2 teaspoon vanilla extract.
Instructions: Preheat your oven to 350F 175C and line baking sheets with parchment paper. In a bowl, combine the rolled oats, flour, baking powder, baking soda, cinnamon, and salt. Set aside. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just incorporated. Fold in the raisins or currants and chopped nuts if using. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are golden but the centers are still slightly soft. Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
