Hey ! How can anyone outgrow Dragon Quest ?! Even today, their stories still captivate me, especially the first one ! But maybe that's just nostalgia talking.
To answer your question, I'm slowly catching up. I have so little time... and money... I'm thinking of buying a Switch when the price drops, so I can get all the games I'm missing.
For now, I've played the first three on my Super Famicom, and I'm starting the next three on a DS I just bought.
I admit I was a bit disapointed that the IV's story doesn't relate to the first three games but I got over it quickly. I really have to stop myself from playing after 11 p.m., otherwise I end up staying up all night.
