Ingredients: 1 lb shrimp, peeled and deveined. 1 ripe mango, diced. 1/2 red onion, thinly sliced. 2 cloves garlic, minced. 1/4 cup fresh cilantro, chopped. 2 tbsp olive oil. 2 tbsp lime juice. 2 tbsp tequila. Salt and pepper to taste.
Instructions: In a bowl, combine olive oil, lime juice, tequila, minced garlic, salt, and pepper to make the marinade. Add shrimp to the marinade and toss to coat. Let it marinate for 15-20 minutes in the refrigerator. Heat a skillet over medium heat. Add marinated shrimp and cook for 2-3 minutes on each side or until shrimp turn pink and opaque. Once cooked, remove shrimp from the skillet and set aside. In the same skillet, add diced mango and sliced red onion. Cook for 2-3 minutes until slightly softened. Return the cooked shrimp to the skillet, toss with mango and onion mixture, and cook for an additional minute. Garnish with chopped cilantro before serving. Serve hot and enjoy!
