Ingredients: 1 lb shrimp, peeled and deveined. 2 ripe avocados, diced. 2 cups cherry tomatoes, halved. 2 tbsp olive oil. 2 tbsp lemon juice. 2 cloves garlic, minced. Salt and pepper to taste. 2 tbsp fresh cilantro, chopped optional. Lettuce or mixed greens for serving optional.
Instructions: In a large bowl, combine shrimp, diced avocados, and cherry tomatoes. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
