Ingredients: 1 cup 2 sticks unsalted butter, softened. 1/2 cup granulated sugar. 2 cups all-purpose flour. 1/4 teaspoon salt. 1 teaspoon vanilla extract. 1/2 cup cream cheese, softened. 1/4 cup powdered sugar. 1 tablespoon lemon zest. 1 tablespoon lemon juice. 1/2 teaspoon vanilla extract. Yellow food coloring optional. Lemon slices and zest for garnish optional.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the vanilla extract and mix until well combined. In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms. Roll the cookie dough into small balls and place them on the prepared baking sheet. Using a fork, gently press down on each cookie to create a crisscross pattern. Bake the cookies in the preheated oven for 10-12 minutes or until the edges turn golden brown. Remove the cookies from the oven and let them cool completely on a wire rack. Meanwhile, prepare the lemon cream cheese frosting by combining the softened cream cheese, powdered sugar, lemon zest, lemon juice, and vanilla extract in a bowl. If desired, add a few drops of yellow food coloring to achieve a pale yellow frosting.
