Took this orecchiette with zucchini and smoked trout recipe and ran with it! Didn’t have smoked trout, so I cooked salmon with Aleppo pepper. Then I decided we needed more veg because grating a giant zucchini wasn’t enough, so we added sweet corn. Didn’t want want to bother with toasting bread crumbs, so I crisped the skin. What started as a simple dinner took on life of its own. Happy Leo season, y’all.
