This delicious ice cream is made with creamy coconut milk as the base. Toasted marshmallows and coconut give it a great taste and texture.
Ingredients: 1 can coconut milk. 1/2 cup sugar. 1 teaspoon vanilla extract. 1 cup marshmallows, toasted. 1/2 cup shredded coconut, toasted.
Instructions: Over medium-low heat, mix the sugar and coconut milk in a saucepan. Mix it around until the sugar is gone. Now take it off the heat and mix in the vanilla extract. Let the mixture cool down all the way. After the mixture has cooled, use an ice cream maker and follow the directions on the box. When the machine is almost done churning, add the toasted marshmallows and shredded coconut. The ice cream should be put in a container and frozen for at least 4 hours, or until it is firm.
