This Skillet Tuscan Spinach Tortellini is a quick and flavorful one-pan dinner option. Packed with sun-dried tomatoes, spinach, and Parmesan cheese, it's a satisfying meal that's ready in no time!
Ingredients: 1 tbsp olive oil. 1 onion, finely chopped. 3 cloves garlic, minced. 1 cup sun-dried tomatoes, chopped. 1 cup chicken broth. 1 cup heavy cream. 1 tsp dried oregano. 1/2 tsp red pepper flakes. Salt and pepper to taste. 1 9 oz package refrigerated tortellini. 3 cups fresh spinach leaves. 1/2 cup grated Parmesan cheese. Fresh basil leaves for garnish.
Instructions: Heat olive oil in a large skillet over medium heat. Add onion and garlic, cook until softened and fragrant, about 2 minutes. Stir in sun-dried tomatoes, chicken broth, heavy cream, oregano, and red pepper flakes. Season with salt and pepper, bring to a simmer. Add tortellini, cover and cook until tortellini are tender, about 7-9 minutes. Stir in spinach until wilted, about 1-2 minutes. Remove from heat, stir in grated Parmesan cheese. Garnish with fresh basil leaves before serving.
