These vegan baklava ice cream sandwiches are a delightful twist on the classic dessert. Crispy layers of phyllo dough filled with sweet nut mixture and creamy vanilla ice cream make for a deliciously indulgent treat.
Ingredients: 1 cup chopped walnuts. 1/2 cup chopped almonds. 1/4 cup sugar. 1/2 tsp ground cinnamon. 1/4 cup maple syrup. 1/4 cup vegan butter, melted. 12 sheets vegan phyllo dough. Vegan vanilla ice cream.
Instructions: Warm the oven up to 175F 350C. Put the nuts, sugar, cinnamon, and almonds in a bowl and mix them together. Melt some vegan butter and brush it on one sheet of phyllo dough. Spread some of the nut mixture out on top of the phyllo sheet that has been buttered. Add another sheet of phyllo dough on top, and keep going until you have 6 sheets of phyllo dough. Add a layer of nuts on top to finish. Cut the layered phyllo dough into squares or rectangles with a sharp knife. After the oven is hot, bake for 15 to 20 minutes, or until golden brown and crispy. Take it out of the oven and let it cool down all the way. Put a scoop of vegan vanilla ice cream on one piece of baked phyllo dough after it has cooled down. To make a sandwich, put another baked piece of phyllo dough on top. Do it again with the rest of the ice cream and phyllo dough. You can serve it right away or freeze it for later.
