Vegan cacio e pepe with roasted tomatoes & toasted pine nuts INGREDIENTS @eatbanza chickpea spaghetti 3 tbsp olive oil 2 shallots sliced 1/2 tsp salt 1/2 tsp pepper 1 head of garlic 1.5 cups riced cauliflower 1/2 cup toasted pine nuts + 2 tbsp more for topping 2 tbsp @appelfoods nut crumbs (bread crumb alternative) 2 cups of raw cherry tomatoes Serves ~2 . DIRECTIONS For the garlic, chop the top off of the bulb, wrap in aluminum foil & roast at 400F for 20-30 minutes. For the tomatoes, add 2 cups of raw cherry tomatoes into a baking dish & pour in about 1.5 tbsp of olive oil & salt. Roast at 400 for ~30 min (stir around at 15). Heat the olive oil, shallots, roasted garlic, and s&p, in a large pan for around 5 min. Then add in the cauli rice & 1/2 cup of pine nuts. Remove from heat once the cauli rice is soft and add everything to a mixer along with 1/4 cup of pasta water. Blend until smooth (add more pasta water as needed). Pour back into the large pan along with the cooked spaghetti and cherry tomatoes & mix thoroughly. Serve & top with toasted pine nuts + bread crumbs (add these to a baking sheet w parchment paper and broil for a few min until brown) + pour the juice from the baking dish with the tomatoes on top.
