Freezer meals going far tonight... Chilli con carne freezes really well and you can quickly whip up some accompaniments to make a full meal for a big family here. This one portion actually will feed 10. The best thing about this chilli? Made in the instapot/slow cooker as an ‘all in one’ method so for those short on time this is perfect for you! In your instapot or crockpot or slow cooker add the following: A pack of chopped/sliced onions OR slice two large onions Two stalks of celery chopped (optional) 800g-1kg of beef mince (no need to go lean on this one, you’ll need the fat in the beef for the cooking) Punnet of mushrooms chopped Two tins of chopped tomatoes 1 tbsp of ground coriander 2tbsp of ground cumin 2tbsp of ground paprika 1tsp garlic granules (or two crushed cloves) 1 bag of frozen chopped peppers OR a couple of red or yellow peppers chopped Put the lid on the pot, either slow cook on low overnight OR use the beans/chilli setting on an instapot. When it’s finished, add a tin of rinsed and drained kidney beans and black beans, stir well and cook for another half hour.
