Quick outing with this children round Marbury this morning and then started this marinade ready for Asian style roast beef with satay sauce for dinner tonight. Honestly this is super easy. I’ve got a big sirloin but this would also work with a roasting joint, just cover in foil. To make the marinade add a generous splash of fish sauce, chopped coriander and mint, 2 tsp minced garlic, 1tsp minced ginger, chilli sauce (mine are actually minced chillies but if you prefer sweeter you could use chilli sauce...) generous ground pepper & lemongrass. I’ve also added two large spoonfuls of peanut butter. Stir well and slather all over your beef and leave in the fridge until this afternoon. The satay is super easy: one tin of coconut milk, splash of tamari soy sauce, three large spoonfuls of peanut butter and either lemongrass or juice of a fresh lime. Mix together in a pan and simmer until it starts to thicken and set aside. All of this took ten minutes this morning.
