Ingredients: Porto Bello mushrooms, Sweet Potato, Ginger, spinach, basmati rice, raisins, black pepper, oregano, sea salt, paprika, coconut oil
Chop in big pieces the sweet potato, porto bello mushrooms and in smaller cubes the ginger.
Sauté the vegetables on the pan with coconut oil Add fresh grind black pepper, oregano, salt and paprika Add spinach leaves and let them get softer but not too much. Remove from heat Add fresh mint leaves
Prepare basmati rice in a lot of water Add salt Add raisins When rice is ready put everything in and mix it well together.
Remove from fire and enjoy this delicious yummy soup full of surprises where every ingredient maintains its taste.
